This is a really interesting drink, and it can vary quite a bit in quality. Ours took a lot of tweaking and tinkering to perfect, but we feel pretty strongly that it’s one of the best you can get, anywhere. Here it is:
1.5 oz. Flor de Cana 4 Year Gold Rum
.75 oz. lime juice
.75 oz. ginger syrup*
.5 oz. Cruzan Black Strap Rum
Combine the gold rum, lime juice, and ginger syrup in a shaker. Shake with ice and strain into an iced collins glass. Add ginger beer to just under the rim of the glass. Top with black strap rum and garnish with lime. It is very important to use gold rum and dark rum in the right places, and to use good ginger beer. We use homemade, and it’s not too complicated to make your own with a SodaStream or by mixing soda water and ginger syrup with some spices (we use allspice and red pepper flakes), pineapple juice, and honey.
*Combine 2 parts thinly sliced fresh ginger root with 3 parts water and bring to a boil. Lower the heat to low and let simmer for one hour. Add 2 parts white sugar and dissolve. Strain.
